Harvest The grapes are carefully selected and hand picked at the end of October in the early morning or late afternoon and placed in small cases

Vinification
The selection of the grapes which takes place in mid-September is very meticulous. After a soft pressing, the temperature is immediately decreased in order to nurture the settling and elimination of matter present in the must. Fermentation takes place in stainless steel tanks at a controlled temperature (14-15°C). The wine then ages in stainless steel tanks until February at a temperature of approximately 10°C so as to maintain intact the patrimony of the bouquet
