HARVEST Grapes are handpicked and placed in 20 kg boxes.

FERMENTATION Thanks to its rich aromatic properties and high acidity, Passerina is particularly apt to make sparkling wine using the Charmat method. Fermentation at controlled temperature gives a very fine wine, aged on the lees for about 90 days, commonly called Charmat Lungo (long process). The wine obtained is a sparkling wine with a fine and persistent perlage, creamy and silky, with heady and enthralling scents living up to the expectations which entices you to drink more.






COLOUR Bright yellow with silver shades. Persistent and fine perlage.

BOUQUET A successful fusion between the soft fruity nuances and fresh flowery sensations. Intense, fine, fragrant, recalling acacia flowers, pleasant and very elegant, with white fruit and citron aromas.

TASTE Enthralling aromas of white flowers, soft nuances of fruits, lively citrus fruit sensations, together with the freshness and tanginess enhanced by its appetizing fizz, are pleasingly in contrast with the smoothness of this wine. Excellent persistence with an agreeable taste-bouquet match.
