Ever since the very beginning of our activity, it was our wish to produce an important
white wine in 1980. After a careful clonal selection, we decided to allot a vineyard to
Chardonnay. The characteristics of the soil (clayey marl with a substrate rich in
pebbles, which make water drainage easier), the adopted system of vine cultivation
(untrained vines the "alberello" method, with a high density of plants per hectare and
low yield, 3.5-4 tons/ha, with grapes rich in sugar, aroma and extracts)have
naturally affected the final result, obtained under the technical guidance of our
oenologist, Mr. Romeo Taraborelli. A result which meets our expectations and has
required special attention, such as grape selection both on the vines and during
harvesting: clusters are hand-picked and immediately chilled to avoid spontaneous
fermentation; controlled fermentation takes place in different barriques with different
features: Allier, Never, Troncais, Limousin, Slavonja. The final pooling of the contents
of the various casks, and the subsequent refinement in the bottle complete our
painstaking work: now the wine is ready for your judgement and, hopefully, approval.
This is an elegant and vigorous wine, with a luminous yellow colour with a golden
hue. Its perfume is complex, pronounced and reminiscent of citrus fruit, vanilla,
spices, with a full and wellbalanced flavour. The possible combinations with food are
many, thanks to its richness and structure, but its characteristics can be appreciated
when not accompanied by food, at a temperature of at least 12°C.
